Schäufele is prepared from pork shoulder and is commonly served with potato dumplings in Franconian inns. On our current menu you will find “Roast pork shoulder”: Crispy roasted pork shoulder from the oven served with homemade sauerkraut, flavorful gravy and fluffy potato dumplings.

Aischgrund carp

Franconian bratwurst
In Erlangen, Franconian bratwurst is traditionally served in a bread roll, with potato salad or with sauerkraut.
